One of the trademark heritage recipe in the Malaysian food culture is Sambal Ikan Bilis. It is not only the favorites of the Malays but appeals to the Chinese too. Sambal Ikan Bilis is delectable, and yet pungent and caustic flavored. 


Ingredients and Preparation for 4

Prepare slices of 1 large onions, 10 garlic gloves, 1 medium size ginger, 10 red chilli, 1 lemon grass. And 2 cups ikan bilis (anchovies).
Making sambal paste:- Blend:- onions, garlic, ginger, chilli, lemon grass.













Cooking Steps

Fry 1 cup peanuts in cooking oil in a skillet over medium heat until peanuts turn brown. Remove and place over paper towels to drain the excess oil. Reserve the oil for later use.
Reused the cooking oil to fry ikan bilis (anchovies) over medium heat until it turns crisp and brown. Remove and place over paper towel to drain the excess oil. Discard the used oil.
Saute the sambal paste in 5 tbs cooking oil over medium heat briefly.
Add ikan bilis to the cooked sambal ingredients, stir and combine well. For flavor, add:- 1 tbs salt, 4 tbs sugar. Combine seasonings with ikan bilis.
Add fried peanuts to the cooked ingredients, stir and combine well.
Combine peanuts and ikan bilis and continue frying until sambal paste has blended into the ingredients.
Ready to serve. Sambal ikan bilis can be taken as side dish or condiments with coconut steam rice or as salads - cold dish with sliced cucumber. Keep refrigerated.
